Christmas Eve candelit dinner

Make a simple Christmas Eve meal so you can save your energy for the next day's feast.

By Dana McCauley

Family holiday celebrations often begin for many Canadians on Christmas Eve.

Since last minute shopping, readying the house for guests and decorating for "the big day" also happens then, dinner needs to be special but easy to prepare! We think this menu fits the bill, combining holiday colours and seasonal flavours in a meal light enough not to ruin appetites for the big feast on the following day.

Recipes:
Lemon Parsnip Soup
Wilted Spinach Salad
Trout Almondine
Leek, Mushroom, Wild and White Rice Pilaf
Caramelized Pear-Cranberry Strudel
