Christine Cushing isn't putting her cooking show on the back burner as she supports breast cancer research. As the host of Christine Cushing Live heads into a third season of her cooking program this fall, she's also promoting KitchenAid Cook for the Cure, a fund-raising initiative that welcomes Canadians to host dinner parties and urge guests to make donations. Instead of bringing a gift for the host, guests can make a donation to the Canadian Breast Cancer Foundation.
If you're looking for some inspiration for your own dinner party, check out the Greek treats in the following menu from Cushing's cookbook Fearless in the Kitchen.
Chicken Lemon Soup (Avgolemono) Would you travel a mile for some soup? According to Cushing, her brother will come from far and away for a bowlful of Avgolemono and she refers to it as "the most amazing soup there is."
Roast Leg of Lamb Greek Style A staple in Cushing's kitchen, lamb is packed with garlic and fresh herbs.
Accompaniments: Fresh crusty bread and green beans cooked with tomatoes and oregano, will add just the right flavours that'll complement this dinner. And for dessert, baklava will be a fine finale for this meal.
What makes a good chef great? Fearlessness. That's what Cushing proclaims in the October 2003 issue of Homemakers, on newsstands starting Oct. 21.
