Golden-yellow polenta made from cornmeal is a culinary staple in Northern Italy. This complex carbohydrate provides energy and supplies dietary fibre. Pairing it with red peppers delivers carotene, a substance the body converts into vitamin A, which helps to protect against colds and infection.
