Mexican cooking is much more refined and regionally diverse than we might garner from the slim pickings that we get in restaurants here. In fact, many of them are more likely to reflect commercialized Tex-Mex traditions than the true culinary traditions of Mexico.

Here, we offer a little creative taste of the vibrant cuisine of Mexico's arid and mountainous north, where the cooking is less complex than the south, but the flavours are satisfyingly strong and full.
