Fusing the flavours of India with the methods of Italy, this is a trendy hot-weather dessert.

Ingredients

• 

2-1/2 cups (625 mL) homo milk

• 

3/4 cup (175 mL) 35 % whipping cream

• 

2 masala chai tea bags (Available at grocery stores.)

• 

1/4 cup (50 mL) liquid honey

• 

3 tsp (15 mL) unflavoured gelatin

• 

Fresh fruit

Preparation

Combine 2 cups (500 mL) milk with cream, tea bags and honey in a saucepan set over medium heat or bring just to a boil in microwave oven. Cover and let stand for 10 minutes. Place remaining milk in a large bowl. Sprinkle over gelatin. Let stand for 1 minute. Remove the tea bags from the tea mixture and squeeze out excess moisture. Discard tea bags. Whisk softened gelatin mixture into the tea mixture. Pour equal amounts of tea mixture into six 1/2-cup (3-in) ramekins. Place on a tray and cover with plastic wrap. Chill until set, about 3 hours. Unmold onto serving plates and serve with fresh fruit.
