The flavours of a delicious chili con carne are all here in this meat loaf. The canned green chilies and chipotle chilies in adobo sauce are available at most grocery stores. If you can't find the green chilies, grill two or three jalapeño chilies over a flame until the skins are black; peel, seed and chop
them.

Ingredients

• 

2 eggs

• 

1-1/2 cups (375 mL) fresh whole wheat or white bread crumbs

• 

1 can (127 mL) chopped green chilies, drained

• 

1 tbsp (15 mL) sweet paprika

• 

2 tsp (10 mL) ground coriander seeds

• 

1-1/2 tsp (7 mL) dried oregano

• 

1 tsp (5 mL) ground cumin

• 

3/4 tsp (4 mL) salt

• 

3 cloves garlic, pressed or minced

• 

1 cup (250 mL) finely chopped white onion

• 

1/2 cup (125 mL) chopped fresh coriander

• 

1-1/2 cups (375 mL) canned red kidney beans, drained and rinsed

• 

1-1/4 lb (625 g) extra-lean or lean ground beef

• 

4 oz (125 g) lean ground pork

• 

2 cups (500 mL) canned chopped tomatoes

• 

4 chipotle peppers in adobo sauce, seeded and minced

• 

2 tbsp (30 mL) adobo sauce from canned chipotles

• 

2 tbsp (30 mL) tomato paste

• 

2 tbsp (30 mL) brown sugar

• 

1 tbsp (15 mL) cider or wine vinegar

• 

1-1/2 cups (375 mL) grated Monterey Jack or Cheddar cheese (optional)

Preparation

In large bowl, beat eggs, bread crumbs, green chilies, paprika, ground coriander, oregano, cumin, salt and garlic; mix in onion and fresh coriander. Stir in beans, beef and pork until well combined.

Form into loaf and place in 13- x 9-inch/3 L baking dish. Mix tomatoes, chipotles, adobo sauce, tomato paste, sugar and vinegar; pour over meat loaf. Bake in 350°/180°C oven until centre of meat loaf reaches 160°F/71°C, about 1-1/2 to 1-3/4 hours; sprinkle cheese (if using) over loaf after 1 hour of baking time.

Per serving: about 267 cal, 23 g pro, 10 g total fat (4 g sat. fat), 22 g carb, 5 g fibre, 94 mg chol, 637 mg sodium. % RDI: 7% calcium, 29% iron, 14% vit A, 23% vit C, 20% folate.
