| Here's an all-time favourite: a classic cookie that's loaded with pieces of chocolate - but without any artery-clogging trans fats. |

Ingredients

3/4 cup (175 mL) canola oil |
|
|
|
1-1/4 cup (300 mL) lightly packed brown sugar |
|
|
|
1/2 cup (125 mL) granulated sugar |
|
|
|
2 eggs (preferably omega-3 eggs) |
|
|
|
1 tsp (5 mL) vanilla |
|
|
|
2 cups (500 mL) whole wheat flour |
|
|
|
1/2 tsp (2 mL) baking soda |
|
|
|
6 oz (175 g) bittersweet chocolate, chopped into chunks |

Preparation
|
|
Line baking sheets with parchment paper.
In bowl and using electric mixer, beat together canola oil and brown and granulated sugars until blended, about 1 minute. Beat in eggs and vanilla until smooth, about 3 minutes. Stir in flour and baking soda until well blended. Stir in chocolate.
Drop by teaspoonfuls onto prepared pan; bake, one pan at a time, in centre of 375°F (190°C) oven until golden brown and set, 12 to 15 minutes. Let cool for 1 minute on pan; transfer to rack. Let cool completely.
Makes about 4 dozen cookies.
