Preparation
Preheat broiler to high. Slice sausages in half lengthwise without cutting all the way through. Butterfly each sausage and place cut-side-down on a rimmed non-stick baking sheet. Place on top rack of oven under broiler and cook for about 6 minutes or until brown.
Turn sausages and spread evenly with mustard. Sprinkle bread crumbs evenly over sausages. Place pan on lower rack of oven and broil for 3 to 5 minutes or until topping is golden and sausages are cooked through.
Heat butter in a skillet set over medium heat. Add onion and cook, stirring often, for 5 minutes. Increase heat to medium-high and add sauerkraut. Cook, stirring often, for 3 to 5 minutes or until browned. Serve sausages over sauerkraut mixture.
