Pusateri's Cranberry Sauce

The chefs at swanky Pusateri's Fine Foods in Toronto make this festive condiment for their customers. It's easy to make at home.

Ingredients

• 

2 lb (1 kg) fresh cranberries

• 

2-1/4 cups (550 mL) fresh orange juice

• 

2 cups (500 mL) granulated sugar

• 

1-1/2 in (4 cm) cinnamon stick

• 

1 tsp (5 mL) finely grated orange peel

• 

pinch of ground cloves

Preparation

Combine cranberries, orange juice, sugar and cinnamon stick in a large saucepan. Bring to a boil over high heat.

Reduce heat to medium low, and simmer for about 30 minutes, or until cranberries burst open and mixture is thick enough to coat the back of a spoon.

Remove from heat. Stir in orange peel and cloves. Spoon into warm, sterilized jars, filling up to 1/4-in (5 mm) below the rim.

Seal while mixture is hot with sterilized 2-piece lids with new centres.

Makes 6 cups (1.5 L).
