Ingredients

• 

12 oz (375 g) pea shoots

• 

2 tbsp (30 mL) peanut or vegetable oil

• 

2 cloves garlic, minced

• 

1/2 tsp (2 mL) salt

Preparation

Remove any tough stems from pea shoots and discard. Rinse pea shoots in cold water. Heat oil in wok or large skillet over high heat; fry garlic and salt until fragrant, about 20 seconds. Add pea shoots with water clinging to them; stir-fry until liquid evaporates and pea shoots are tender, 2 to 5 minutes.

Makes 4 servings.
