This simple honey syrup makes beautiful seasonal strawberries even more special. Use a light-coloured, fragrant honey such as Canadian blueberry, acacia, basswood or wildflower honey.

Ingredients

• 

1/3 cup (75 mL) liquid honey

• 

1/2 tsp (2 mL) grated lemon rind

• 

2 tbsp (30 mL) lemon juice

• 

2 cups (500 mL) strawberries, whole or halved

Preparation

Mix together honey, lemon rind and juice; let stand for at least 30 minutes. Mix with strawberries.

Makes 8 servings.
