Summer Berry Brûlé

This almost effortless dessert elegantly showcases summer berries.

Ingredients

• 

7 cups (1.75 L) mixed berries such as raspberries, blueberries, blackberries and small strawberries

• 

1/3 cup (75 mL) granulated sugar

• 

1 tbsp (15 mL) balsamic vinegar

• 

1 tsp (5 mL) grated orange peel

• 

1 cup (250 mL) each 35% whipping cream and sour cream

• 

Brûlé Topping:

• 

½ cup (125 mL) granulated sugar

• 

¼ cup (50 mL) water

Preparation

Combine berries with sugar, vinegar and orange peel. Toss to combine. Transfer to a 4-cup (2L) casserole dish, heat-proof bowl or 8 dessert dishes. Reserve. Whip cream until very thick. Fold in sour cream. Spread evenly over fruit. Reserve in refrigerator for up to 6 hours.

Brûlé topping: Stir sugar with water in a saucepan. Bring to a boil and cook, without stirring for 8 to 10 minutes or until amber in colour. Remove from heat and immediately drizzle over cream layer. Serve immediately.
