Ingredients

• 

2/3 cup (150 mL) mayonnaise

• 

1 tbsp (15 mL) rice vinegar

• 

2-1/2 tsp (12 mL) prepared wasabi

• 

2 cans (each 170 g) tuna, drained and flaked

• 

1/2 cup (125 mL) shredded red radish

• 

Softened butter

• 

24 slices white sandwich bread

• 

Half English cucumber, thinly sliced

Preparation

Mix together mayonnaise, vinegar and wasabi; mix in tuna and radish.

Spread butter thinly on one side of each slice of bread; cover with cucumber slices. Spread about 3 tbsp (45 mL) of tuna mixture over half of the bread slices; top with remaining slices. Cut off crusts; cut into finger sandwiches as desired.

Makes 36 to 48 pieces.

Per each of 48 pieces: about 68 cal, 2 g pro, 4 g total fat (1 g sat. fat), 6 g carb, 0 g fibre, 7 mg chol, 105 mg sodium. % RDI: 1% calcium, 3% iron, 1% vit A, 5% folate.
