Use ripe red plums or purple prune plums for this juicy fruit dessert that is just barely sweetened to preserve the fruit flavour. The cooking time will vary depending on the variety, size and ripeness of the plums; check often.

Ingredients

• 

Half vanilla bean

• 

1/3 cup (75 mL) granulated sugar

• 

8 firm ripe plums, quartered (about 2 lb/1 kg)

• 

2 tbsp (30 mL) butter

Preparation

Halve vanilla bean lengthwise. Using side of knife, scrape seeds from vanilla bean; place in small bowl with sugar. Using fingers, work seeds into sugar until evenly distributed. Set aside.

In bottom of 10-cup (2.5 L) baking dish, arrange plums; sprinkle with sugar mixture and dot with butter. Cover with foil and roast in centre of 375°F (190°C) oven until plums are tender, 20 to 40 minutes. Remove foil; bake until sauce thickens slightly, about 6 minutes.

Makes 4 servings.
