Does the world need another diet book? Why not, if that diet is effective and safe, and one that people are likely to follow? Dr. Arthur Agatston, a Miami beach cardiologist, seems to have found the formula. He developed the South Beach diet in an effort to control heart disease and type 2 diabetes among his patients, and his book, The South Beach Diet (Rodale Press, 2003, $34.95) is selling well. It focuses on replacing less-nutritious fats and carbohydrates with those that are more beneficial.
Phase one lasts two weeks and is quite strict: no bread, rice, potatoes, pasta, baked goods, fruit, candy, cake, ice cream, beer, wine or liquor.
However, dieters can enjoy orange roughy in scallion and ginger sauce, or grilled steak with tomato relish. In Phase two, which lasts as long as it takes to lose the weight, the dieter re-introduces certain carbohydrates.
Phase three is a lifelong, wise eating plan.
South Beach quick tip: Eat whole wheat, rather than white bread, and dip it into olive oil, rather than using butter.
