Happy birthday Heinz

smiling plateOne of my favourite sayings is “life has a life of its own.” For me this cliché has proven itself to be very true. You can set goals, plan and anticipate the steps you need to take to travel from point ‘A’ in your life to point ‘B’ and have general success in your planning; but, along the way, life will take a few unexpected turns that will ultimately take you to the place you really need to be.

That’s the story of my career, in fact. People think I was very clever to get a degree in English literature and then go to chef school to become a food writer. However, in all honesty, I went to chef school dismayed by the lack of job satisfaction brought my way by my university degree. Chef school was supposed to lead to a restaurant career. In the end, the two bits of training conspired without my knowledge and led me down a wonderful job path as a food writer that I wouldn’t trade for the world. My life just somehow turned out.

The same is true about my attitudes. Over time, they’ve evolved and I’ve grown confident enough to own up to my less than gourmet food proclivities. For instance, I grew up in a household where Heinz ketchup was on the table for every meal. My father and brother slopped it over eggs, sandwiches, mashed potatoes and meats of all kinds. While I was always a user myself (French fries and Grilled Cheese are just not complete for me without ketchup!), I was a terrific critic of my family’s slavish ketchup use – especially after I became a chef school student and perfected my disdainful sneer.

As fate would have it, when I transitioned from restaurant chef to consumer recipe and food writer, Heinz became one of my customers. Over the many years I’ve worked with the brand, I’ve taken that condiment to places my father and brother literally would never, ever have envisioned on their own. I dare say, I’m the one who sometimes grosses them out now. From grilling sauces and meatloaves to pad Thai and sweet and sour chicken; our test kitchen has developed, tested or edited every single recipe on the Heinzitup! website.

Our latest triumph is using ketchup as an ingredient in layer cakes. While Amy Snider and I could have just sloshed ketchup into any old recipe and crossed our fingers, we took a step back and thought about what ketchup could offer a cake recipe to make it better or easier than making a similar recipe that already exists. In the Great Canadian Heinz Ketchup Cake, the ketchup is a short cut ingredient that adds the flavours of cloves and ginger that make a terrific pantry spice cake. (BTW, you can see the team at BT Toronto tasting our cake this morning.)

Given how entwined my own life has been with ketchup, I’m not surprised that as Heinz celebrates its 100th anniversary in Canada that it’s still one of our favourite condiments and short cut ingredients. I don’t know what the next 100 years can hold for ketchup lovers, but somehow I have a feeling that in 2109, it will still be common on many Canadian family dinner tables.

Lentils for lunch

While I’m really not liking this new marketing term “uber cocooning” (why not just call people shut-ins or hermits?) I worry I could be mistaken for one. You see, I do love a well-stocked pantry. It just makes life so much easier to be able to make a great recipe literally right out of the cupboard.

Case in point: this lentil salad that I made recently for my Sunday lunch. The genesis for this bowl of yummy stuff was a humble can of lentils that I drained, rinsed and put in a bowl. Subsequent scavenging led to the discovery of green pumpkin seeds, a carrot, a quarter of a red pepper, a hunk of a forgotten pomegranate, some coriander and a shallot. A little chopping and a very few minutes later, my salad was born as this concoction dressed with a curry flavoured dressing.

Delish on a dime and in no time!

What’s your favourite out-of-the-cupboard lunch?

By the way, here’s how I made the Curry Vinaigrette:

1 tsp (5 mL) curry paste
1/2 tsp (2 mL) each honey and minced fresh ginger
1 tbsp (15 mL) white wine vinegar
1/4 tsp (1 mL) minced fresh garlic
3 tbsp (45 mL) canola or extra virgin olive oil
salt and pepper

Blend the curry paste, honey, ginger and vinegar together until smooth. Stir in the garlic and while whisking, drizzle in the oil. Season with salt and pepper to taste.

Topline Trends Tuesday: Skyr and the Nordic Diet

Even while the Mediterranean diet continues to be recommended and discussed, a new diet with a geographic connection is emerging: the Nordic Diet. The popularity of this diet is rooted in the longevity enjoyed by Scandinavian dwellers — especially Icelanders, who are Europe’s longest living people (although, that distinction is only held by Icelandic men so maybe as a woman I should be looking elsewhere for health food tips!).

Earning a lot of media attention in the UK, the Nordic diet features a high protein-to-carbohydrate ratio as well as an abundance of cool climate foods such as high-antioxidant blueberries and cruciferous cabbage. A pillar of the Nordic diet is skyr (pronounced skeer), a dairy product from Iceland that I saw for sale in New York City grocery stores recently. With next to no fat and exceptional levels of calcium and protein, skyr is being marketed as a snack for active people and as a supplement to a healthy lifestyle. I asked my friend chef Michael Olson (whose family roots are Icelandic) about skyr; he says it’s thinner than commercially made Canadian yogurt and a bit tarter, making it similar to kefir.

Although there are predictions that the Nordic Diet will be the next big trend in countries that have cold weather climates (like Canada and the UK), with Santa Claus as the current spokesperson for Northern climes, I’m thinking they may need to do a lot more marketing to get people to try this eating regime!

Local leaps forward

The locavore movement has been on my trend tracker’s radar for quite some time but never during my research have I found anything as inspiring as the story of the Go Ontario! Granola Bars.

Every ingredient in these additive-, preservative- and trans fat-free bars is sourced from an Ontario farm and the bars are, in turn, sold to Ontario schools to use for fundraising snack programs.

I just love this idea and hope it’s the beginning of a trend that sees more companies returning to regional food production. It’s a great way to reduce the carbon footprint of packaged foods and a wonderful way to support local producers.

Although these bars won’t be available at retail for a little while longer, I can tell you that I’ll be trying them as soon as they are on the shelf.

Other than produce and ingredients like honey and maple syrup, are products that use all local ingredients available in your area?

Help! I have a split personality!

A recent study conducted by Cornell University scrutinized 770 family cooks to discover that there are five distinct cooking personalities among home cooks:

1. “Giving” cooks (22%) are enthusiastic about cooking and specialize in comfort food, particularly home-baked goodies.
2. “Methodical” cooks (18%) rely heavily on recipes, so their cooking is strongly influenced by the cookbook they use.
3. “Competitive” cooks (13%) think less about health and more about making the most impressive dish possible.
4. “Healthy” cooks (20%) often serve fish and use fresh ingredients, but taste isn’t the primary goal.
5. “Innovative” cooks (19%) like to experiment with different ingredients, cooking methods and cuisines, which tends to lead to healthier cooking.

These profiles were developed to predict how the cooking style of each household’s primary home cook may affect the health of an entire family. The theory discussed in the article is that the primary home cook’s style influences around 70% of the foods we eat, not just when we eat meals at home but also children’s lunches, snacks eaten outside the home, and even what family members order at restaurants.

Can you identify yourself in any of these profiles? I can see myself as a ‘giving cook’ on some days but also as an ‘innovative cook’ on most days. Does this mean I have split culinary personality disorder?

BBQ Time: Calibrate your thermometer

Don’t you hate it when you find out that because you weren’t properly informed you wasted money?  I’ve long been a fan of metal probe-style instant read thermometers. As I’ve written before, they help you to cook meat not only safely but also to the perfect level of doneness. I knew these thermometers need to be tested frequently (especially after being dropped) but whenever I found one to be on the fritz, displaying a temperature out of whack with normal  temperature standards, I threw it away.

At an average of $15 each, that means that over the last few years, I’ve thrown out well over $100 worth of instant read thermometers!  That’s money I could have spent on dinner out at a nice restaurant, a facial, bonbons, beer or some other necessity of life. (Or, I guess I could have saved it,  but whatever.). 

Essentially that cash went into my trash can and then into land fill since almost all instant read thermometers can be calibrated. I learned this info when I took a safe food handling course on Sunday and I’ve been mad at myself ever since for not knowing that these tools are easily adjusted.

As I got over the initial embarrassing sting of how I’ve wasted money, I realized that if one person doesn’t know about something, there are likely others who aren’t informed either. So, today, just in time for grilling season, I’m going to teach you how to check your instant read thermometer for accuracy and how to fix it if it fails the test. 

  • Step One – Testing:  Fill a glass with equal parts cold water and ice cubes to make an ice slush mixture. Insert the instant read probe into the centre of the mixture being sure not to touch the sides or bottom of the glass. If the thermometer does not read 0 degrees celsius (or 32 degrees fahrenheit) move on to step two.  Otherwise, clean the probe and put it away.
  • Step Two – Calibrating: Turn the thermometer so that the face is away from you. On the underside of the thermometer, look for the nut that attaches the probe to the casing that holds the face. Use a small adjustable wrench to turn this nut gently. Retest the temperature and readjust the nut until you get the appropriate reading. Note:  Many models have a wrench built right into the same holder that keeps the probe clean and protected!

Say "yes" to pie!

A Piece of the PieJust like casseroles, pie is back! I know that since last October I’ve made more pies and tarts than ever before and at my dining room gatherings, pie has definitely been the new cake!

While recipes for great pies are bouncing around the internet at frenetic speed, places that make great pie are also getting their fair share of attention:

Three Sisters Pies in Alberta is a much-loved staple at the Millarsville Farmers’ Market because their dessert pies made from premium, regional, ethical and organic ingredients make people feel good about eating pie while their super flaky, hand-crafted flaky pastry makes doing the right thing a pleasure!

Gourmet on the Lake’s Muskoka Food Boutique has an entire day of the week devoted to pie! That’s right, every Friday they have a full roster of fresh sweet and savoury pies ready for their customers to take home and love as their own!

And, if you’re thinking that this pie pandemonium is just a Canadian thing, guess again. According to this post in The Nibble, pies are quite often the preferred choice in the US right now, too.

Topline Trends Tuesday: Fondue

fondueI wish I could tell you how many times I’ve been told by a PR flak that “fondue is back!” (except that they usually say it in capital letters!) Seriously, it must be a claim made at least every two years if not more often. Regrettably, the only thing that usually supports a news flash that fondue is back like it’s 1971 again is that an appliance company has put out a new fondue pot and it’s trying to sell lots of them. Then, some poor, tired and overworked food editor succumbs to these self interested messages and prints a story about how fondue is back in fine form. Bridal magazines are particularly apt to write such stories.

I had long given up on fondue ever really becoming more than a wish as a trend until I was at the IACP Conference in Denver earlier this month and saw Peggy Fallon’s new book: Great Party Fondue. Peggy may just resurrect this trend not because she has great PR folks (although I’m sure she does), but because Peggy actually reinvents fondue in healthy, appealing ways that make even a jaded old naysayer like me want to break out the dipping forks. Many of her recipes are cheesy and traditional but the recipes that could bring fondue pots out of the pantry closet and onto the dining table are her veggie based fondues that basically take the appeal of soup and make it into a concoction you can’t resist dipping into again and again.

High risk foods

I’m usually a pretty casual person. Not only is our office population small and unassuming, but we work with food and I never know at the beginning of the day how much time I might need to spend in the kitchen. As a result, I rarely dress up for a day at work (seriously: I can count on the fingers of one hand how many times I’ve worn panty hose during daylight hours in the last 12 months). In fact, 3 work days out of 5, you’ll find me in flats and machine washable clothes at the office. The other two days, if I have on something nicer, it’s only because I have a meeting with someone outside of our little group.

Last Thursday, I attended a fancy gala at the Four Seasons hotel that honoured this year’s Ontario Hostelry Institute’s award winners (My husband and his partner got the Gold Award designating them Ontario’s Independent Restauranteurs of the year!) I wore a filmy white organza top and a shiny aubergine coloured satin skirt – both designer label and ridiculously expensive in comparison to most of the other clothes in my closet. As I dressed, I didn’t think about the perils that eating a meal in that kind of outfit might present. But, as I sat down for dinner, I was overcome with fear when I thought about the high risk foods I might be asked to eat in my finery. They had already tried to get me to eat a drippingly juicy shrimp at the cocktail reception – who knew what hijinks lay ahead at dinner? My imagination ran away with me and I began to make a list of foods that one should never serve when people might be wearing delicate fabrics:

• ice cream cones
• spaghetti in tomato sauce
• anything ‘tall’ that can tumble down into a sauce and splash you
• gooey butter tarts
• croissants (buttery crumbs can be dangerous, too)
• whole cherry tomatoes
• red wine
• foods topped with melted, stringy cheese (like pizza)
• any hors d’oeuvres served with a dip
• ribs or chicken wings
• pomegranate
• ripe cherries
burgers

There are likely many more foods to add to the list but that’s as far as I got before I had to rejoin polite conversation. I made it through the meal but not without being super careful (I left a roasted-on-the-vine tomato on my plate because it was just too likely to burst if I put my fork into it!) Have you ever had a dining disaster that ruined a favourite piece of clothing?

Cowless beef

Although not currently available to consumers, the theoretical idea that beef can be grown in a lab from a single bovine cell is capturing mainstream attention. Most often sneered at or satirized (recently the sitcom Better off Ted did a brilliant job of the latter), supporters of this idea (including PETA) do exist.

Their argument is that lab-grown (officially called in vitro meat) beef and pork shows potential for being more environmentally friendly than farm raised meat. There are also arguments that because such proteins are produced under controlled conditions, they will be safer food sources, more nutritious and more humane than conventional meat.

Sound like science fiction? Guess again. Apparently small amounts of edible fish can already be produced in a lab environment.

How do you feel about this idea? Does it freak you out or inspire you? If in vitro meat became our only meat supply would you become a vegetarian? I think I would.
