Asparagus Flan with Tofu Recipe
Asparagus Flan with Tofu
Ingredients
- 1 lb (500 g) asparagus
- 1-3/4 cups (425 mL) unsalted vegetable or chicken stock
- 1 tsp (5 mL) salt
- 4 eggs
- Pinch white pepper
- 2 cups (500 mL) 3/4-inch/2 cm cubes soft tofu
- 1 tbsp (15 mL) thinly sliced green onion (green part only) or chopped chives
Preparation
Trim tough ends from asparagus and discard; trim off tips and set aside. Finely slice stalks; place in saucepan with stock and salt, and simmer until very soft, about 10 minutes. Purée in blender; strain into bowl. Beat in eggs and pepper until thoroughly combined but not frothy.
Line bottom of 9-inch/23 cm deep-dish glass pie plate with tofu cubes; pour asparagus mixture over top. Arrange asparagus tips on top.
Cover with foil and place in hot steamer; steam over medium heat until lightly set in centre, about 40 minutes. Remove foil and sprinkle with chives.
Makes 4 to 6 servings.
