Chinese "Family-Style" Tofu Recipe

Chinese "Family-Style" Tofu

Like many, if not most, of the popular Chinese tofu dishes, this recipe combines meat with tofu. For a vegetarian version, you can use vegetable stock and replace the meat with flavourful shiitake or other
mushrooms.

Ingredients

1 pkg  (425 g)  regular tofu
1/2 cup  (125 mL)  vegetable oil
3 cloves garlic, minced
8 oz  (250 g)  lean  pork or pork shoulder or belly, thinly sliced, or mushrooms
1 tbsp  (15 mL)  Chinese rice wine or dry sherry
3 tbsp  (45 mL)  Chinese chili bean paste or Guilin chili sauce, or 2 tbsp/30 mL hoisin sauce mixed with 1 tbsp/15 mL Asian chili sauce
1 sweet  green pepper, cut in 1-1/2-inch/4 cm squares
Half sweet  red pepper, cut in 1-1/2-inch/4 cm squares
2 cups  (500 mL)  Napa cabbage, bok choy or cabbage, cut in 1-1/2-inch/4 cm squares
5 lbs  green onions, cut in 1-1/2-inch/4 cm lengths
1/4 cup  (60 mL)  chicken or vegetable stock
1/2 tsp  (2 mL)  sesame oil

Preparation

Place tofu on flat plate and set second plate on top to lightly press out excess moisture; let stand for 20 to 30 minutes. Drain and pat dry; slice tofu into scant 1/2-inch/1 cm slices.

In nonstick or cast-iron skillet, heat oil over medium-high heat; fry tofu slices, turning once, until golden brown. Drain on paper towels.

Transfer 2 tbsp/30 mL of the oil into wok or skillet over high heat; fry garlic until fragrant, 10 to 20 seconds. Add pork; stir-fry until edges are lightly browned, then stir in wine. Stir in chili-bean paste; stir-fry until pork is coated and paste is cooked, about 30 seconds.

Add green and red peppers, cabbage, onions and tofu; stir-fry for 1 minute. Stir in stock and equal amount of water; cover and cook until vegetables are tender-crisp, 3 to 5 minutes. Uncover and stir-fry until no liquid pools in bottom of wok. Stir in sesame oil.
