Chocolate Banana Cake
Use really ripe bananas - the kind you've left on the counter until they're black - in this recipe for the most flavour.
Ingredients
- 2 cups (500 mL) mashed banana (about 5)
- 1/2 cup (125 mL) soy milk or skim milk
- 1/2 cup (125 mL) canola oil
- 2 tsp (10 mL) lemon juice
- 2 eggs (preferably omega-3 eggs)
- 2 tsp (10 mL) vanilla
- 1-1/3 cups (325 mL) whole wheat flour
- 1 cup (250 mL) all-purpose flour
- 1-1/4 cups (300 mL) granulated sugar
- 1/4 cup (50 mL) unsweetened cocoa powder
- 1-1/2 tsp (7 mL) baking powder
- 1-1/2 tsp (7 mL) baking soda
- 1 tsp (5 mL) cinnamon
- 1/2 tsp (2 mL) salt
- 1/2 cup (125 mL) mini chocolate chips
- Icing sugar (optional)
Preparation
Line 13- x 9-inch (3.5 L) pan with parchment paper.
In large bowl, blend together bananas, milk, oil, lemon juice, eggs and vanilla. Stir in whole wheat and all-purpose flours, sugar, cocoa powder, baking powder, baking soda, cinnamon and salt. Using electric mixer, beat gently for 2 minutes. Stir in chocolate chips just until combined. Scrape into prepared pan.
Bake in 350F (180C) oven until toothpick inserted in centre comes out clean, 30 to 40 minutes. Transfer to rack; let cool. Sprinkle with icing sugar (if using).
Makes 15 large servings.
