Chocolate Hazelnut Tart for Two

What's more romantic than a melt-in-your-mouth dessert with a double-layered creamy chocolate filling in an aromatic nut crust? Use the best-quality chocolate you can find, as the flavour and texture of this tart depends on it.

Ingredients

1/2 cup  (125 mL)  hazelnuts
2 tbsp  (30 mL)  butter, melted
Milk Chocolate Layer:
3 tbsp  (45 mL)  whipping cream
2 tsp  (10 mL)  butter
1-1/2 oz  (45 g)  milk chocolate, finely chopped
Dark Chocolate Glaze:
2 oz  (60 g)  bittersweet chocolate, finely chopped
2 tbsp  (30 mL)  whipping cream
1 tbsp  (15 mL)  corn syrup
1 tbsp  (15 mL)  butter

Preparation

On baking sheet, toast hazelnuts in centre of 350°F (180°C) oven until fragrant and golden, about 10 minutes. Transfer nuts to tea towel and rub to remove as much of the skins as possible.

In food processor, grind hazelnuts until fine. Combine hazelnuts and butter until evenly moistened; press into bottom and ¾-inch (2 cm) up side of 5-inch (12 cm) fluted tart tin with removable bottom. Chill in refrigerator until firm, about 1 hour.

Milk Chocolate Layer: In small saucepan, heat cream and butter over medium heat until steaming hot and butter is melted; pour over chocolate in heatproof bowl and stir until smooth. (If chocolate doesn't melt completely, place bowl over small saucepan of barely simmering water and stir until melted and smooth.) Pour chocolate mixture into prepared crust. Refrigerate until firm, about 3 hours.

Dark Chocolate Glaze: In heatproof bowl set over small saucepan of barely simmering water, melt together chocolate, cream, corn syrup and butter; stir until smooth. Pour over top of milk chocolate layer. Refrigerate until firm, about 3 hours.

(Make-ahead: Cover loosely and refrigerate for up to 1 day.)

Tip: For a large tart that makes 8 servings, multiply the crust ingredients by 3 and follow method as directed, pressing into 9-inch (23 cm) tart tin with removable bottom; multiply milk chocolate layer and dark chocolate glaze ingredients by 4 and follow method as directed.
