Seafood Pie Recipe
Seafood Pie
Ingredients
- Puff Pastry Cups:
- 1 sheet frozen puff pastry (store bought), cut into 4 squares
- 1 egg beaten
- 4 pieces wax paper
- White Wine Sauce:
- 1-1/2 cups (375 mL) water
- 1-1/2 tsp (7 mL) fish base
- 1/2 cup (125 mL) 35% cream
- 1 tbsp (15 mL) all-purpose flour
- 1 tbsp (15 mL) cornstarch
- Seafood Pie Filling:
- 1 cup (250 mL) fresh Atlantic salmon 1/2 inch diced
- 1 cup (250 mL) peeled and deveined shrimp (41/50)
- 1-1/4 cups (300 mL) haddock 1/2 inch diced
- 1/2 cup (125 mL) fresh asparagus blanched, 1 inch pieces
- 1/2 cup (125 mL) carrots peeled, blanched, 1/4 inch diced
- 4 tsp (20 mL) shallots fine diced
- 4 tbsp (60 mL) white wine
- 2 tbsp (30 mL) unsalted butter
Preparation
Puff Pastry Cup
Brush puff pastry with egg wash, and place between four small pie tins (4inch) using waxed paper in between tins. Bake at 350 for 20 - 25 mins or until golden brown.
White Wine Sauce
1. Mix water, cream and fish base. Bring to a simmer.
2. Slurry flour and cornstarch with white wine, add to simmering sauce while stirring. Simmer 5 mins.
3. Strain and cool.
Seafood Pie Filling
1. Melt butter and sauté shallots.
2. Add seafood and toss.
3. Add wine and steam for 30 sec.
4. Cool seafood mixture.
5. Place asparagus and carrots on top of seafood.
6. Ladle white sauce over, lightly mix, reserve.
Heat filling and puff pastry separately. Ladle hot filling into hot puff pastry cups. Serve with a fresh green salad.
