Concord Grape Pie Filling

Our native Concord grapes have a marvelously rich and foxy flavour, but, because of their seeds, they need to be prepared before baking.

Ingredients

6 cups  (1.5 L)  Concord grapes
1 cup  (250 mL)  granulated sugar
2 tbsp  (30 mL)  instant tapioca or cornstarch
1 tbsp  (15 mL)  lemon juice
1 double-crust pie dough

Preparation

Stem grapes. Squeeze off skins; chop skins and set aside. Transfer pulp to heavy-bottomed saucepan; cook, covered, over medium heat until seeds separate, 5 to 8 minutes. Pass through food mill or push through sieve to remove seeds; let cool.

Mix seeded pulp with reserved skins, sugar, instant tapioca and lemon juice. Scrape into prepared pie pastry.
