No longer just for Fridays, fish can take centre stage on North American tables every day of the week. And it's no wonder: low in saturated fat and high in protein, fish is a health-conscious diner's delight.

As any good grizzly knows, salmon is rich, flavourful and satisfying. Its distinctive taste and meaty texture makes it a mouth-pleasing, tummy-filling treat. The meal possibilities are endless: fillets, steaks, smoked, whole, canned. And you don't have to swim too far upstream for good recipes -- we've compiled our top 10 salmon dishes right here.

So treat yourself and your family to a scrumptious salmon meal any night of the week. 

1. Cold Poached Salmon with Ginger Mayonnaise
Cold poached fish, especially salmon, is a classic summer dish. For a refreshing light meal, serve with cucumber salad or cooled, blanched summer vegetables and a fresh baguette from the bakery.

2. Grilled Salmon with Dill and Mustard Seeds
Dill is a favourite seasoning for salmon; here, it's complemented by spicy mustard seeds and cumin. Mayonnaise helps the spices adhere to the salmon, adds moistness and prevents the fish from sticking to the grate.

3. Olive Oil-Poached Salmon with Mint Salsa
Poaching salmon in olive oil makes it fragrant and moist -- and the fish absorbs very little of the oil. Garnish the salmon with fresh mint leaves, if you like. Serve with saffron rice, and peas with pearl onions on the side.

4. Salmon Ribbon Satays
Very pretty and so easy to make! You can prepare these satays up to 8 hours ahead and then quickly cook them as the party progresses.

5. Salmon with Crab Sauce
Salmon is good for both the brain and the heart, the chief centres of love and attraction. And when you smother this fish in a rich sauce of crab, it's fit for the most cherished and honoured lover in your life. Serve with a steamed or sautéed green vegetable.

    try taking a salmon fillet or whole boned fish skin side down and sprinkle heavily with equal amounts of dried or fresh basi and dried or fresh oregano, big gobs of butter on the flesh side if you aren't too concerned or good margerine or olive or grapeseed oil drizzled on the fish and lots of thinly sliced red onion and about two lemons squeezed over a whole fish and finish with salt and pepper to taste. Cook on a large cookie tray covered for most of the time and uncover for the last 10 minutes if there is too much liquid. Cook at 350 F in the oven or on the barbeque with the top down until the fish is cooked through. Serve with a nice green salad and little boiled potatoes or whatever you like. I have been cooking this for a long time and even those who aren't fish eaters go back for seconds. You are where you have been. Yours on the road, Darcy

    I have the most simple way to do salmon and it always turns out. Cover a salmon fillet with lemon slices, some thinly cut onions, a few dabs of butter or margarine and finally sprinkle some salt & pepper over the fillet. Place this fillet, carefully, into a paper bag and then loosely close the bag. Place this packet on a microwave-safe dish and microwave for approximately 6 minutes or until fish flakes easily. Turn the packet over half way through cooking time. If fillet is thicker it may require more time. I sometimes put 2 fillets, one on top of the other, in a bag with the same ingredients between them and cook approximately 8 minutes, or again until the fish flakes.
