20 juicy fruit recipes for summer

Canadian winters are long and root vegetables and preserves provide only so much variety. So it's no wonder why fruit lovers across the nation look forward to the summer months, when they can savour fresh local fruit.

Canadian farmers can grow many types of fruits and vegetables, so it's easy to pick an assortment of recipes and give ‘em a try as different produce comes into season.

Juicy fruit recipes: Berry recipes
1. Flaxseed and Blueberry Pancakes
Try these fluffy, whole grain, flaxseed pancakes with pure maple syrup on the weekend for breakfast or on a hectic weeknight for dinner. They are quick and easy to make.

2. Cranberry Vinaigrette
Make a spinach salad festive with this dressing and add clementines, pecans and dried cranberries for added crunch.

3. Strawberry Rhubarb Jelly
The delicate flavours of these two spring and early summer fruits blend beautifully in this naturally low-fat ruby-red jelly. Dress with a simple tumble of fresh strawberries.

4. Summer Berry Brûlé
This almost effortless dessert elegantly showcases summer berries.

5. Field Berry Custard Tart
For the crust on this tart, you can make a standard pastry shell, or this easy, press-in-the pan crust.

9. Cherry Chicken with Rosemary and Orange
Serve this dish with mashed potatoes or a mixture of white and wild rice.

10. Peachy Plum Galette
This fast-and-easy free-form pie can also be made with either peaches or plums. For the pastry, a packaged pie crust mix is fine.

11. Ginger Pear Tart in Puff Pastry
Packaged puff pastry is easy to roll out for this open-face tart.

12. Poached Pears with Honey Cider Sauce and Quark
Use ripe but firm pears in this delectable, low-fat dessert. Quark is a tangy, low-fat, fresh cheese, but you can use low-fat cottage cheese or ricotta if you like.

13. Vanilla-Roasted Plums
Use ripe red plums or purple prune plums for this juicy fruit dessert that is just barely sweetened to preserve the fruit flavour.

14. Apple and Pear Granola Crisp
Oats, nuts, apples and pears make a very healthy combination, especially when sweetening is kept to a minimum.

15. Apricot, Nectarine or Peach Crisp
This crumble-topped fruit dessert contains less than half the sugar and fat of a traditional crisp. For the best flavour and texture, use apricots, peaches or nectarines that are fully ripe but still firm.

16. Niagara Peach Sangria
Celebrate summer with a cold beverage made with peaches straight from local orchards.

18. Cantaloupe and Watercress Salad
If you aren't serving this salad as part of a vegetarian meal, you can top it with one or two slices of cured ham, such as prosciutto, serrano or Westphalian ham.

19. Vineyard Chicken Salad

20. Melon with Mint Ice Cream
With the hot summers in many parts of Canada over the past few years, local melons have become sweeter. Nothing beats vine-ripened cantaloupe or musk melons for aroma and flavour; really minty ice cream made with fresh summer mint gilds the lily.
