1. Thai Glass Noodle Salad
This colourful salad makes an excellent accompaniment to a Thai meal of grilled chicken, pork or fish with rice. It also works well on a buffet or picnic table.
2. Warm Tea Noodle Toss
These refreshing Chinese noodles carry a light hint of oolong tea. Serve as a light lunch or make them part of a dinner.
3. Firecracker Noodle Salad
This recipe has "firecracker" in the title for a reason, but if you want a milder taste, you can reduce the sambal olek (an Indonesian chili sauce available at most grocery stores) and ginger by half and substitute green pepper for the cubanelle.
4. Curry Beef Noodles
You can use any prepared Indian curry paste for these noodles; hot Madras curry paste is an excellent choice. Serve with pappadams on the side, and fresh lime wedges to squeeze over the noodles.
