Coronation Grape Pie Filling

Coronation (or Sovereign Coronation) grapes are showing up in late summer and autumn markets all over Canada, as the popularity of this seedless Concord-type grape grows. Because they are seedless, they can be treated as most other fruit in pie-making.

Ingredients

6 cups  (1.5 L)  stemmed Coronation grapes
1 cup  (250 mL)  granulated sugar
1/4 cup  (60 mL)  all-purpose flour
1 tbsp  (15 mL)  lemon juice
1 double-crust pie dough

Preparation

Mix together grapes, sugar, flour and lemon juice. Scrape into prepared pie pastry.
