Although cooking rice the conventional way takes more than 30 minutes, rice suppers are so delicious and satisfying that many cooks make a double batch of rice so they can throw together a skillet rice dish later in the week. Now, microwave rice steamers offer a fast, easy way to make rice in under 15 minutes. Available at specialty stores across Canada, rice cookers are made from plastic or borosilicate glass (a glass originally designed for use in laboratories.)
Rice Basics: Generally speaking, rice falls into two basic categories: short-grain (glutinous rice, sushi rice, arborio rice, etc.) and long-grain (Carolina, basmati, jasmine, etc.). Short-grain rice is best used in dishes that need a creamy or sticky texture, such as rice pudding, sushi and risotto. Long-grain rice is ideal in pilafs, salads and side dishes where it's best if the grains fall apart. To cook long-grain and most short-grain rices, place rice and double its volume of water or other clear cooking liquid in a deep, heavy-bottomed saucepan. Cover and bring to a boil. Immediately reduce heat to low. Simmer, without stirring and uncovering only near the end to check doneness, for 15 to 20 minutes or until al dente. Remove from heat and let stand for 2 minutes before fluffing with a fork.
