Bags of grated cheese in resealable bags are not only convenient but available in a wide variety in the chilled dairy case of supermarkets. Look for cheddar, mozzarella, Tex-Mex or nacho mixes, Italian blends, seasoned or plain crumbled feta to name a few. You can also grate your own, bag it and store in refrigerator for three days or freeze for up to four weeks.

While pieces and blocks of cheese do not freeze well - they tend to dry and crumble when thawed - grated firm cheeses freeze quite well. Use them to top pizzas, casseroles, vegetable gratins, baked potatoes, stir into sauces or vegetable mash, toss in salads or garnish soups.
