Cottage Rice and Beans

This daily staple is served often by the locals in charming cottages.

Ingredients

1 cup  (250 mL)  cooked red kidney beans
1 cup  (250 mL)  coconut milk
2 green onions, chopped
1 clove garlic, minced
1/2 tsp  (2 mL)  hot pepper sauce (optional)
1 tsp  (5 mL)  each dried thyme, salt and pepper
1 cup  (250 mL)  long-grain rice

Preparation

Combine beans, coconut milk, green onions, garlic, hot pepper sauce, thyme, salt and pepper in a saucepan. Add 1-1/3 cup (325 mL) water to saucepan and bring to a boil. Simmer on medium for 5 minutes.

Stir in rice and return to a boil. Reduce heat to low. Cover tightly. Cook for 15 minutes. Test rice and if firm, cover and continue to cook for 5 minutes, adding a little additional water if necessary. Remove from heat. Let sit, covered, for 5 minutes. Fluff with a fork.

Makes 6 to 8 servings.
