Honey-Nut Spelt Muffins Recipe
Honey-Nut Spelt Muffins
These muffins make delicious use of whole spelt flour, a grain whose flavour goes especially well with walnuts.
Ingredients
- 1-3/4 cups (425 mL) whole spelt flour
- 3/4 cups (175 mL) + 2 tbsp (30 mL) all-purpose flour
- 1/2 cup (125 mL) oat or wheat bran
- 1-1/2 tsp (7 mL) baking powder
- 3/4 tsp (4 mL) salt
- 1/2 tsp (2 mL) baking soda
- 2 eggs
- 1-1/3 cups (325 mL) buttermilk
- 1/2 cup (125 mL) liquid honey
- 2/3 cups (75 mL) vegetable oil
- 1-1/2 cups (375 mL) chopped walnuts
Preparation
In large bowl, whisk together spelt and all-purpose flours, bran, baking powder, salt and baking soda.
Whisk together eggs, buttermilk, honey and oil; pour over flour mixture. Sprinkle with walnuts; stir together just until combined.
Scoop into 12 greased or paper-lined muffin pans. Bake in centre of 375F/190C oven until tops are crisp and cake tester inserted in centre comes out with dry crumbs, about 22 minutes.
Makes 12 muffins.
