Mexican Bagel Egg Bakes Recipe

Mexican Bagel Egg Bakes

This substantial breakfast is perfect for chillier days when you want a hot breakfast but don't have a lot of time to spend cooking or cleaning up.

Ingredients

2 whole grain bagels
1 tbsp  (15 mL)  butter
4 eggs
1/2 tsp  (2 mL)  each salt and pepper
1/4 tsp  (1 mL)  chili powder
1/2 cup  (125 mL)  mild salsa

Preparation

Butter cut-sides of bagels, trimming holes to 1 in (2.5 cm) in diameter, if needed. Place bagels, butter-side-down, in a heavy skillet over medium-high heat. Cook for about 2 minutes or until golden on bottom.

Break an egg into centre of each bagel half and evenly sprinkle with salt, pepper and chili powder. Bake in oven preheated at 400F (200C) for 8 minutes or until egg is set but yolk is still soft.

Serve with salsa on the side.

Makes 4 servings.
