The wine, brandy and subtle orange flavour of these burgers will please adult palates. Top with slices of roasted sweet red pepper.

Ingredients

1/2 lb  (250 g)  lean ground beef
1/2 lb  (250 g)  lean ground pork
1/3 cup  (75 mL)  minced fresh coriander
3 tbsp  (45 mL)  dry red wine
2 tbsp  (30 mL)  Brandy
2 tbsp  (30 mL)  extra-virgin olive oil
2 cloves garlic, pressed or minced
1 small onion, minced
1/2 tsp  (2 mL)  salt
1/4 tsp  (1 mL)  each cayenne and black pepper
1/4 tsp  (1 mL)  grated orange rind

Preparation

In bowl, mix together beef, pork, coriander, wine, brandy, oil, garlic, onion, salt, cayenne, pepper and orange rind. Form into 4 patties. Grill, covered and turning once, over medium-high heat until no longer pink inside or digital thermometer inserted sideways into centre reads 160F/71C. Makes 4 servings.
