Smoked Eggplant Dip Recipe
Smoked Eggplant Dip
Ingredients
- 1 large eggplant
- 1 head garlic (unpeeled)
- 1/4 cup (60 mL) extra-virgin olive oil
- 2 tbsp (30 mL) lemon juice
- 1/2 tsp (2 mL) salt
- Pinch cayenne pepper
- Pinch paprika (optional)
Preparation
Cut 4 evenly spaced 1-inch/2.5 cm deep slits lengthwise into eggplant; place with garlic on grill over medium-high heat. Sprinkle handful of water-soaked wood chips, such as mesquite, apple or cherry, over coals (or follow your gas grill instructions for smoking); cover and grill, turning each once, until garlic is softened and eggplant is charred and fork-tender, 20 to 30 minutes. Let cool.
Peel eggplant; removing any large seed clusters, transfer flesh to bowl. Squeeze garlic cloves from skins and add to bowl; with fork, mash well. Whisk in oil, lemon juice, salt and cayenne. Transfer to shallow bowl; sprinkle with paprika (if using).
Makes 8 to 10 servings.
