Fresh kohlrabi, with leaves attached, is usually sold in bunches of 1-½ to 2 lb (750 g to 1 kg). Peel them with a paring knife, trimming off any fibrous bits under skin.

Ingredients

1 bunch kohlrabi
1/4 tsp  (1 mL)  salt
2 tbsp  (30 mL)  extra-virgin olive oil
1 tbsp  (15 mL)  lemon juice
1/4 tsp  (1 mL)  pepper

Preparation

Peel and cut kohlrabi into ¾-inch (2 cm) cubes. Place in steamer basket over boiling water; sprinkle with salt. Cover and steam until tender-crisp, 8 to 9 minutes. Drain; toss with olive oil, lemon juice and pepper.
