Stir-Fried Soybean Sprouts with Garlic Chives
Soybean sprouts are firmer than regular bean sprouts made from mung beans. Find soybean sprouts at Chinese and Korean grocery stores.
Ingredients
- 12 oz (375 g) soybean sprout (about 6 cups/1.5 L)
- 4 oz (125 g) garlic chives or Chinese chives
- 2 tbsp (30 mL) peanut or vegetable oil
- 2 cloves garlic, minced
- 1 red hot pepper, seeded and julienned
- 1-1/2 tsp (7 mL) light soy sauce or fish sauce, or 1/2 tsp/2 mL salt
- Pinch granulated sugar
Preparation
Pinch roots from sprouts. Cut chives into soybean-sprout lengths.
In wok or skillet, heat oil over high heat; fry garlic and pepper until fragrant, 10 to 20 seconds. Add sprouts; stir-fry for 30 seconds. Add soy sauce, sugar and 2 tbsp/30 mL water; continue stir-frying, adding a little water if necessary to avoid scorching, until sprouts are tender, 3 to 4 minutes.
Stir in chives and stir-fry until wilted, 30 to 60 seconds.
Makes 4 to 6 side servings.
