Three-step stratas can be thrown together in minutes using leftovers from the refrigerator and then cooked while you set the table and sort through the mail. Feel free to mix and match ingredients, according to what you have on hand. (Suggestions for variations follow.)

Ingredients

3 cups  (750 mL)  cubed bread
1 cup  (250 mL)  finely diced ham
1 cup  (250 mL)  shredded Swiss cheese
3 green onions, thinly sliced on diagonal
2 cups  (500 mL)  cooked broccoli florets
5 eggs, beaten or carton (250mL) liquid eggs, well shaken
1-1/2 cups  (375 mL)  milk
1/2 tsp  (2 mL)  each salt and pepper

Preparation

Preheat oven to 350F (180C). Lightly oil a 10-inch (25 cm) pie plate or shallow casserole dish. Spread bread cubes evenly in dish.

Sprinkle over ham, cheese and green onions. In a bowl, whisk eggs with milk, salt and pepper. Pour evenly over bread mixture.

Bake in centre of preheated oven for 30 to 40 minutes or until set and golden. Let rest for 10 minutes before slicing and serving.

Makes 6 to 8 servings.

Variations:

California: Substitute leftover chicken for ham and use Monterey Jack cheese for Swiss cheese and 2 seeded chopped tomatoes for broccoli.

Stampede: Substitute chopped cooked steak for ham and cheddar for Swiss cheese. Add 1 tsp (5 mL) chili powder to milk mixture.

Florentine: Skip the meat. Squeeze the water from 1 package (340 g) thawed frozen chopped spinach. Substitute mozzarella for Swiss cheese and 2 seeded chopped tomatoes for broccoli.

Uptown: Substitute smoked salmon for ham and asparagus tips for broccoli. Add 1 tbsp (15 mL) chopped fresh dill or ½ tsp (2 mL) dried dillweed to the egg mixture.
