Swiss-Style Cheese Ramekin with Spinach and Ham

In the Swiss canton of Vaud, a "ramekin" is a baked dish of bread and eggs with cream, often with other added ingredients, as in this version with spinach and ham. Serve it as an Easter brunch or lunch main course, or as an appetizer or first course for dinner.

Alpen Schinken is a German/Swiss–style cured and lightly smoked ham that is sliced thinly like prosciutto or Serrano ham (Piller's makes an excellent Alpen Schinken available at many grocery stores). You can also use speck, rohschinken, prosciutto or Serrano ham, or shaved slices of Black Forest ham. For a vegetarian ramekin, simply omit the ham.

Ingredients

10 slices white bread
8 oz  (250 g)  Gruyère cheese, shredded
2 bunches, spinach, blanched, or 2 pkg (each 300 g) drained thawed frozen spinach, coarsely chopped
10 thin slices Alpen Schinken, halved (about 3 oz/90 g total)
1/3 cup  (75 mL)  dry white wine
6 eggs, separated
1/4 tsp  (1 mL)  white pepper
Pinch nutmeg
1/2 tsp  (2 mL)  salt
2 cups  (500 mL)  10% cream

Preparation

Toast bread; cut off crusts, then diagonally halve each slice.

Butter 12-cup/3 L baking dish. Lay one toast triangle, centre point out, across one end of dish. Sprinkle with some of the cheese, then top with some of the spinach and slice of ham; continue in same manner, overlapping triangles and topping with remaining cheese, spinach and ham, one at a time. Drizzle wine over top.

In bowl, whisk together yolks, pepper, nutmeg and half of the salt; whisk in cream. In separate bowl, beat egg whites with remaining salt until in soft peaks; fold into yolk mixture. Spoon over triangles; bake in centre of 375F/190C oven until top is golden-brown and yolk mixture is set, about 25 minutes.
