Flat Iron Beet Salad Recipe
Flat Iron Beet Salad
Ingredients
- Roasted Beets:
- 2 beets washed, stems removed
- 1 tbsp (15 mL) olive oil
- 1 tsp (5 mL) sea salt
- 2 pieces aluminum foil
- Strongbow Dressing:
- 2 tbsp (30 mL) shallots peeled, chopped
- 1-1/2 tsp (7 mL) Dijon mustard
- 1/4 cup (50 mL) Strongbow Cider
- 2 tbsp (30 mL) cider vinegar
- 1 tbsp (15 mL) honey
- 1/2 cup (125 mL) canola oil
- 1-1/2 tsp (7 mL) fresh thyme chopped
- 1/4 tsp (1 mL) salt
- 1/4 tsp (1 mL) ground black pepper
- 1/2 Granny Smith apple fine diced
- 1/2 cup (125 mL) Stilton cheese crumbled
- Pickled Onions:
- 2 tbsp (30 mL) white vinegar
- 1/4 cup (50 mL) water
- 1/4 tsp (1 mL) salt
- 1/4 tsp (1 mL) sugar
- 1/2 bay leaf
- 1/4 tsp (1 mL) black peppercorns
- 4 oz (125 g) red onion peeled, sliced 1/8 inch thick
- 2 cups (500 mL) spring mix
- 1 cup (250 mL) cucumber diced
- 1 cup (250 mL) grape tomatoes cut in half
Preparation
Roasted Beets
1. Rub beets with oil and sea salt.
2. Wrap individually with foil and bake in oven at 350 C, cooking times may vary depending on size of beets (approx 1 to 1-1/2 hrs) cool beets in foil, then peel and slice 1/4 thick, reserve.
Strongbow Dressing
1. Add all ingredients to stainless steel bowl except for oil.
2. Using a wire whip, slowly add oil whipping constantly until finished, place in clean container and reserve.
Pickled Onions
1. Place all ingredients in a medium sized pot except for onions, bring to a boil.
2. Place onions in stainless steel bowl, then pour mixture over top.
3. Let cool, then place in the fridge until completely cold.
Salad
1. In large stainless steel bowl toss spring mix with, cucumbers, grape tomatoes and strongbow dressing.
2. Using 4 large 10 inch square plates or large round plates, place slice beets in a circle 2 inches from the rim slightly overlapping.
3. Place tossed Spring mix salad in the middle, followed by crumbled stilton all over salad and lastly pickled onions right in the centre of the salad.
