Toasted Coconut Sticky Rice Pudding Recipe
Toasted Coconut Sticky Rice Pudding
Ingredients
- 3/4 cups (175 mL) raw sushi style or other short grain rice, rinsed
- 1-1/2 cups (374 mL) coconut milk
- 1 cup (250 mL) water
- 1/2 cup (125 mL) shredded coconut
- 1 egg
- 1/4 cup (50 mL) granulated sugar
- 1/3 cup (75 mL) 35% whipping cream
- 1 tbsp (15 mL) finely chopped candied ginger
- 1 tsp (5 mL) finely grated lime peel
Preparation
Combine rice with 1-1/4 cups (300 mL) coconut milk and water in a saucepan. Bring to a boil. Immediately cover tightly and reduce heat to low. Simmer for 15 minutes. Remove lid and if moisture is absorbed, remove pan from heat, cover tightly and let stand for 5 minutes. If still soupy, cover and continue cooking for up to 5 minutes.
Preheat oven to 300F (150C). Spread coconut evenly on a baking sheet. Toast in oven for 5 minutes or until golden.
Whisk egg with sugar in a heavy saucepan. Stir in cream and remaining coconut milk. Set over medium-high heat and cook, stirring, for 4 to 5 minutes or until slightly thickened. Stir in rice, coconut, ginger and lime peel.
Pour into serving bowls. Garnish with lime slices and additional coconut.
