Southerners love gravy with their fried chicken – a decadent habit worth importing.

Ingredients

• 

3 tbsp (45 mL) bacon drippings or vegetable oil

• 

1/3 cup (75 mL) all-purpose flour

• 

3 cups (750 mL) reserved stock

• 

1/3 cup (75 mL) milk, whipping or light cream

• 

Salt and black pepper

Preparation

In saucepan, heat drippings over medium heat; cook flour, stirring, until golden brown, about 3 minutes. Slowly whisk in stock; bring to boil, stirring. Reduce heat to medium-low; simmer, stirring occasionally, until thickened, 5 to 10 minutes.

Stir in milk and return to boil. Season with salt and pepper to taste.

Makes about 3 cups (750 mL), 6 to 8 servings.
