Children's taste buds are often not mature enough to appreciate liver, and even some adults don't like its fine flavour, so it's best to offer another appetizer, such as this simple goat cheese spread. Spread on toasted baguette
slices and garnish with sprigs of fresh chervil or parsley.

Ingredients

• 

3/4 cup (175 mL) quartered red radishes

• 

2 green onions

• 

10 oz (300 g) soft unripened goat cheese

• 

3 tbsp (45 mL) whipping cream or sour cream

• 

1/2 tsp (2 mL) grated lemon rind

• 

2 tsp (10 mL) lemon juice

• 

1/4 tsp (1 mL) black pepper

• 

Salt

Preparation

In food processor, pulse radishes until finely chopped; slice onions into paper-thin rings. Set aside.

Mash together cheese, cream, lemon rind and juice, pepper and salt (to taste). Stir in radishes and onions.

Makes 1-3/4 cups/425 mL, enough for 16 to 20 pieces.

Per each of 20 pieces (without baguette): about 39 cal, 2 g pro, 3 g total fat (2 g sat. fat), trace carb, trace fibre, 8 mg chol, 45 mg sodium. % RDI: 2% calcium, 2% iron, 4% vit A, 2% vit C, 1% folate.
