Goat-Cheese Dip with Tomato, Mint and Coriander

Fresh mint, coriander, ginger and Iime give a perky flavour to this tomato-topped goat-cheese appetizer. Spread it on pita bread, cucumber slices and pepper strips.

Ingredients

• 

2 medium tomatoes, seeded and finely diced

• 

1/4 cup (50 mL) thinly sliced green onions

• 

2 tbsp (30 mL) coarsely chopped fresh mint

• 

1 tbsp (15 mL) coarsely chopped coriander

• 

2 tsp (10 mL) minced fresh ginger

• 

1 tbsp (15 mL) lime juice

• 

Salt and pepper to taste

• 

12 oz (375 g) soft fresh goat cheese, at room temperature

• 

18 slices (1/4 inch/5 mm) unpeeled seedless cucumber

• 

1 sweet red pepper, cut into 12 strips

• 

Warm pita bread or pita chips

Preparation

Combine tomatoes, green onions, mint, coriander and ginger. (Can be prepared up to 4 hours in advance, covered and reserved in refrigerator.) Add lime juice, salt and pepper just before serving.

Spread goat cheese over a medium-sized serving platter. Sprinkle tomato mixture over cheese. Surround with cucumber slices and pepper strips. Serve pita bread or chips on the side.
