| Turkey parts are widely available, and thighs are the most succulent - look for small ones, which are more tender. Chipotle peppers are smoked Mexican jalapeño peppers that come canned in adobo sauce. This is great served with Avocado Salad. |

Ingredients

|
4 turkey thighs |
|
|
|
1-1/2 tsp (7 mL) ground cumin |
|
|
|
2 chipotle peppers with 2 tbsp (30 mL) adobo sauce |
|
|
|
3 cloves garlic, minced |
|
|
|
2 tbsp (30 mL) fresh lime juice |
|
|
|
1 tbsp (15 mL) liquid honey |
|
|
|
Salt, pepper and vegetable oil |

Preparation
|
|
Sprinkle turkey with cumin and ½ tsp (2 mL) each salt and pepper; brush with 1 tbsp (15 mL) oil. Place on greased grill over medium heat; close lid and grill, turning once, until juices run clear when pierced at thickest part, about 45 minutes.
Meanwhile, seed and mince peppers. Mix with adobo sauce, garlic, lime juice and honey; brush over turkey during last 2 minutes of cooking.
Makes 4 servings.

Variation Grilled Spicy Chipotle-Glazed Turkey Brochettes
Instead of thighs, cut 1-½ lb (750 g) turkey breast into 1-½-inch (4 cm) cubes. Thread onto skewers and proceed as above, grilling until no longer pink inside, 10 to 12 minutes. |
