Ingredients

2 tbsp (30 mL) extra-virgin olive oil |
|
|

1 large onion, diced |
|
|
|
1 (370 mL) bottle roasted red peppers, drained and diced or 3 whole, roasted red peppers, diced |
|

4 cloves garlic, minced |
|
|
|
2 cans diced plum tomatoes (796 mL each) |
|
|
|
1 cup (250 mL) Concord grape juice |
|
|

Preparation
|
|
Heat a large pot over medium heat. Add the olive oil and onion and sauté until soft, about 5 minutes. Add the roasted red peppers and garlic. Sauté for 1 minute. Add the plum tomatoes and grape juice. Using a potato masher, mash the tomatoes into smaller pieces. Bring to a boil. Reduce heat to medium and simmer the sauce for 30 minutes, stirring often. If a smooth sauce is desired, purée sauce in a blender or food processor. Add hot pepper flakes if using.
Tip: For a healthy choice, serve this sauce over whole wheat pasta.
