Chilled Avocado Soup Recipe
Chilled Avocado Soup
Ingredients
- 2 tbsp (30 mL) lemon juice
- 1 tsp (5 mL) finely grated lime peel
- 1/2 tsp (2 mL) ground cumin
- 1/4 tsp (1 mL) each salt and white pepper
- 2 shallots or 1 small onion, peeled and chopped
- 1 clove garlic, chopped
- 6 cups (1.5 L) vegetable or chicken stock
- 3 large, ripe avocados or 4 cups (1L) frozen avocado puree
- Sour cream
- lemon or lime slices
Preparation
Puree lemon juice, lime peel, cumin, salt, pepper, shallots, garlic and stock in a blender or food processor until smooth.
Halve the avocado and firmly hit the pit with the butt end of a chef's knife. Turn the knife 90 degrees to remove pit. Peel off skin and chop avocado. Add to blender and puree until smooth. Cover tightly and chill in refrigerator until very cold. Can be made up to 1 day ahead.
Ladle 3/4 cup (175 mL) soup into chilled serving bowls or small glasses. Garnish with a dollop of sour cream and a thin slice of lemon or lime.
Makes 10 servings.
Tip: If making ahead, taste and add extra lemon juice, if necessary, just before serving.
Make Ahead: Can be made at least 8 hrs ahead.
