Swordfish, salmon, mahi mahi

Fast, fresh and full of nutrients, fish makes an excellent light dinner any time of year. What's more, fish is heart-healthy, as it's low in saturated fat and high in omega-3 fatty acids (found especially in cold-water fish such as salmon), which play an active role in brain function.

Dig into these 10 easy fish recipes -- and tell the family you caught it yourself!

1. Miso-Marinated Broiled Fish
The miso-paste marinade flavours the fish and makes for a lovely glazed exterior. This recipe works best with thicker, firm-fleshed fish fillets or steaks, such as halibut, salmon (especially wild) or swordfish.

2. Steamed Fish with Saffron Pilaf
This convenient dish combines a main and side dish in the same pot. Serve with peas.

3. Grilled Salmon with Dill and Mustard Seeds
Dill is a favourite seasoning for salmon; here, it's complemented by spicy mustard seeds and cumin. Mayonnaise helps the spices adhere to the salmon, adds moistness and prevents the fish from sticking to the grate.

4. Island Style Mahi Mahi
Despite its Creole overtones, this is a popular way to prepare various fish all over the Cayman Islands.

5. Steamed Halibut in Swiss Chard
Slice and blanch the Swiss chard stems until tender and sauté in olive oil to serve with whole wheat couscous as a side dish. You can use any white-fleshed fish, such as catfish or tilapia.

6. Olive Oil-Poached Salmon with Mint Salsa
Poaching salmon in olive oil makes it fragrant and moist -- and the fish absorbs very little of the oil. Garnish the salmon with fresh mint leaves, if you like. Serve with saffron rice, and peas with pearl onions on the side.

7. Oven-Steamed Mushroom-Scented Halibut
Use any fragrant dried mushrooms, such as shiitake, chanterelle, porcini or portobello, in this tasty yet fabulously low-fat dish. Black cod (sablefish), Atlantic cod or other thick, white-fleshed fish can also be prepared in this manner. If desired, spice it up with a little extra black pepper.

8. Grilled Monkfish
Because of its firm texture and lobsterlike taste, monkfish makes a fine fish for the grill. You can substitute other fresh herbs, such as basil, tarragon or coriander, for the mint if desired.

9. Cold Poached Salmon with Ginger Mayonnaise
Cold poached fish, especially salmon, is a classic summer dish. For a refreshing light meal, serve with cucumber salad or cooled, blanched summer vegetables and a fresh baguette from the bakery.

10. Sole Poached in Garlic Sauce
This delicious fish dish is excellent with steamed rice. You can serve the fish over blanched spinach, baby bok choy or snow peas instead of watercress, if you like. Sole is a soft fish; if you prefer a firmer one, use tilapia or pickerel fillets.
