5 best risotto recipes

According to the United Nations Food and Agriculture Organization, rice is a staple food for more than half of the world's population. In Canada, we may not eat rice with every meal, but there is no rule that says it has to be boring when we do.

The next time you're considering a rice-based dish, try making risotto instead. Risotto is a high-starch, sticky rice with a different texture than plain white rice.

Here are the best risotto recipes from Homemakers.com:

1. Fresh Pea Risotto
This one-pot dish is simple yet sophisticated. If you make this risotto outside of pea season, you can use frozen peas (just add them in the last 5 minutes of cooking). And if you have any fresh mint on hand, shred it and sprinkle over the risotto. Serve with crusty bread and a glass of fresh white wine, such as an Italian Soave or Gavi.

2. Beets and Greens Quick Risotto
This simplified version of the Italian rice classic tastes as good as it looks.3. Kale Risotto
If you're using vegetable stock, check fine food or health food stores for a high-quality stock that's flavourful but not too dark in colour.

4. Laissez-Faire Risotto
This arm-saving risotto is almost as creamy as the traditional version.

5. Red Wine Risotto with Rapini and Toasted Pine Nuts
The herb-and-wine combination in this risotto recipe makes a savoury Italian meal. Try different local wines to find your favourite flavour.

Just can't get away from rice? Get to know gourmet rice then shake things up with one of our best rice recipes:

Cool Wild Rice and Mushrooms
Canada's central northern lakes and marshes provide us with the finest fragrant long-grain wild rice.

Brown Rice Biryani
This delicious Indian dish is usually laden with ghee (clarified butter), but this version uses low-glycemic brown basmati rice and contains much less of a healthier fat, but it still has the rich flavour of the original.

Coconut Rice
Toasted coconut, creamy coconut milk and a little spice add lots of flavour to this rice, which makes a good accompaniment to all kinds of tropical dishes.

Spiced Brown Rice Pilau with Eggplant
Indian spiced rice dishes make wonderfully appetizing vegetarian main courses. Unlike most other Indian dishes, rice preparations often use whole spices. Serve with Spinach Raita, a refreshing palate cleanser that adds additional protein, calcium and vegetable nutrients to the meal.

Mexicali Rice and Black Bean Salad
This colourful salad will please any crowd and it can stand as a main course for any vegetarians you may be feeding.
