Green Salad With Papaya Dressing
This unusual salad dressing, which uses papaya seeds, won a prize at the Cayman Islands Agricultural Fair and inspired this colourful salad.
Ingredients
- 1 tbsp (15 mL) white wine vinegar
- ¼ tsp (1 mL) each dry mustard, salt and pepper
- 2 tsp (10 mL) granulated sugar
- ¼ cup (50 mL) vegetable oil
- 1 tbsp (15 mL) papaya seeds
- 6 cups mesclun salad green
- 1-1/2 cups (375 mL) peeled, diced papaya
- 1 cup (250 mL) diced, seeded tomato
Preparation
Whisk vinegar with mustard, salt, pepper and sugar.
Whisking, drizzle in oil until combined. Stir in papaya seeds.
Combine greens, papaya and tomato in serving bowl. Drizzle with dressing and toss.
