Healthy Crunch Chocolate Recipe

Look for puffed whole grain rice in the health food section of your grocery store. Natural almonds are unblanched and still in their skins.

Ingredients

10 oz  (300 g)  dark (70% cocoa) chocolate
3/4 cups  (175 mL)  natural almonds, coarsely chopped
1 cup  (250 mL)  puffed whole grain (brown) rice

Preparation

Line 8-inch/2 L square metal baking pan with parchment paper.

In heatproof bowl over hot (not boiling) water, melt chocolate; remove from heat. Stir in almonds; let cool for 3 minutes. Stir in puffed rice.

Scrape into prepared pan, smoothing top. Refrigerate until hardened, at least 30 minutes. Remove from pan; cut in half, then cut each half into 6 bars (for small snacking bits, cut each bar in half again).

Wrap separately in plastic wrap or wax paper; refrigerate in airtight container.

Makes 12 bars.
