Healthy Crunch Chocolate
Ingredients
- 10 oz (300 g) dark (70% cocoa) chocolate
- 3/4 cups (175 mL) natural almonds, coarsely chopped
- 1 cup (250 mL) puffed whole grain (brown) rice
Preparation
Line 8-inch/2 L square metal baking pan with parchment paper.
In heatproof bowl over hot (not boiling) water, melt chocolate; remove from heat. Stir in almonds; let cool for 3 minutes. Stir in puffed rice.
Scrape into prepared pan, smoothing top. Refrigerate until hardened, at least 30 minutes. Remove from pan; cut in half, then cut each half into 6 bars (for small snacking bits, cut each bar in half again).
Wrap separately in plastic wrap or wax paper; refrigerate in airtight container.
Makes 12 bars.
