Peanut and Sesame Bars

Topped with salty and slightly spicy flavourings, these bars are reminiscent of Chinese sweets.

Ingredients

1  cup  (250 mL)  all-purpose flour
3 tbsp  (45 mL)  vanilla sugar or granulated sugar
Pinch salt
1/2 cup  (125 mL)  chilled unsalted butter, diced
Topping:
2 eggs
1/4 cup  (60 mL)  corn syrup
2 tbsp  (30 mL)  dark rum
1  cup  (250 mL)  packed dark brown sugar
2 tbsp  (30 mL)  all-purpose flour
1  tsp  (5 mL)  ground ginger
1/4 tsp  (1 mL)  cinnamon
Generous pinch cayenne pepper
1  cup  (250 mL)  whole salted roasted peanuts
1/2 cup  (125 mL)  chopped salted roasted peanuts
1/3 cup  (75 mL)  toasted white sesame seeds

Preparation

Line bottom and sides of 8-inch/20 cm square baking pan with parchment paper.

In food processor, pulse together flour, vanilla sugar and salt; add butter and pulse until in texture of slightly coarse meal. Press evenly onto bottom of prepared pan; bake in centre of 350F/180C oven until set and light golden, about 18 minutes. Remove from oven; let cool on rack.

Topping: Whisk together eggs, corn syrup and rum; whisk in sugar, flour, ginger, cinnamon and cayenne. Stir in whole and chopped peanuts and sesame seeds. Spread over baked base in pan; bake in centre of 375F/190C oven until centre is slightly jiggly but softly set, about 22 to 25 minutes.

Transfer to rack; let cool completely. Remove from pan and cut into 1-1/2-inch/4 cm squares.

Makes 36 bars.
